Chicken Tortilla Bake

A Chicken Tortilla Bake is another way to have tortillas and chicken.

  • 4 boneless chicken breasts, skinless
  • 1 red & yellow pepper
  • half a medium onion
  • 3 stalks of celery
  • 2 pkg. large tortilla shells
  • 1 large container salsa
  • 5 c. grated aged cheddar cheese
  • 1 container of sour cream

Start with cutting up your chicken, then cut up your peppers, onion and celery into small pieces. Fry it up in a frying pan. Now, line a large roaster with some salsa. Then spread mixture onto a tortilla shell and roll up.

Place the tortillas in the roaster, making a bottom layer. Cover tortillas with a layer of salsa and cheese. Make a second layer of tortillas and top on the first layer. Cover again with more salsa and cheese.

Cover and bake 300° oven for about 30-45 minutes.

Remove from the oven, using oven mitts cause it will be hot. Remove the lid and let stand for 5 minutes. Now it is ready to serve and you can also add some sour cream on the side also.

I Love Tortillas

Now tortillas are great way to use some meat and cheese and so versatile too. I just came across this one and have yet to try it. Just writing it made my mouth water and sure does seem simple and easy enough to do.

I normally will have a quesadilla or just a taco. So I love that this Chicken Tortilla Bake is so simple and easy to make.

Slow Cooked Chicken and Tortilla Shells

I slow cook some chicken in a slow cooker, that I would add some taco seasoning to. Or sometimes just salt and pepper. You add the seasoning that you want. I add a little water on the bottom of the slow cooker for the chicken to cook in. I put the chicken on for about 8 hours.

When it is all done cooking, I would shred all the chicken and place in a bowl. Get the shells ready and place some chicken inside and top with cheese and lettuce. Roll it all up and eat it. Or we would also lay out one tortilla shell and place some chicken and cheese down. Top with another shell and then put in the oven or fry in a pan. Basically a quesadilla, but using slow-cooked chicken.

Add some salsa and sour cream on the side. Even some tortilla chips on the side too. Easy way to make a simple dinner for when you just don’t have the time to cook. I use this one a lot, since I work from home and am always busy.
