So I now have all my beets, 20 pounds, more than enough to can with. But I will get to enjoy beets with my dinner, or even just a snack. Which ever you like, you will love that you took the time to make some of your own pickled beets.

Now it is fairly easy, have a big pot for your beets to basically precook. Because you will need to remove the skins off your beets. After that, you will cut them up and add to sterilized jars. Making your brine you need water, sugar, vinegar, and your spices.

Lots of recipes vary I have noticed. So this year I am kind of winging it, on how I will do them. I used to use a store-bought pickling spice, but can’t remember how much to add to it. This would also go into a cheese-cloth bag, so it can easily be removed. Maybe I will just have to taste it and see from there. Cause I don’t want them to have too much vinegar taste, or too much pickling spice either. Which I think is the cloves in the pickling spice I am not fond of.

When you do your own beets, you can search online for a simple recipe that you like. As there are so many out there, for you to find. Today I believe I will try this one, or similar to it. So when you know how to do pickled beets, maybe share with others too. Great xmas gifts and share for a picnic too.

Making A Simple Brine For Pickled Beets

Enough to make 3 quarts or 6 pints, double this if making more.

  • 2 c.water
  • 2 c. sugar
  • 3 1/2 c. vinegar
  • 1 Tbsp.allspice (but I’m using Pickling spice)
  • 1 1/12 tsp. salt.

You would then mix this all up and cook for about 15 minutes. After you would add to your sterilized jars. I am using Gem jars today, since I found some in my stash. As it is hard to find any canning lids at this time, or jars for that matter.

So I have 5 Gem quart jars and one pint jar, I have lots of these lids for these jars. I scored all the lids, because someone bought the wrong ones. Was just giving these away. And I only had about a case of Gem jars anyways, but always will need lids. Save on buying some eventually.

After you have gotten the jars filled with your beets and your brine. Wipe jar rims and put on lids and then tighten the rims on the jar. Process for 30 minutes or 35 minutes. In a water bath canner-because these beets are pickled. They don’t need to be pressure canned, water bath canning is good. This is how to do pickled beets.
