Variety of Soups

A variety of soups are what I start to think about when it gets cold outside. Or even when someone gets sick. Depending on what is it I have in my fridge at this time.

Variety of Soups and a bowl of chicken soup

You can make a whole bunch of different kinds of soups. I have squash in my fridge right now. Was on my floor, but it is getting too warm in my house to have it there. So in the fridge, it went. So I made a simple squash soup.

I also need to make a carrot soup or maybe a carrot cake. I was given a whole lot of carrots, ten pounds of carrots. So I would like to make something with those too. I normally would just make a stew with them, as I have lots of potatoes too.

Chickpea Vegetable Soup

  • one onion
  • tablespoon of oil
  • few celery sticks, finely chopped
  • one carrot, finely chopped
  • 2 cloves garlic, finely chopped, more if you like.
  • 1 tbsp. tomato puree
  • 400g can of diced tomatoes
  • 2 tsp ground cumin
  • 1 tsp. ground turmeric
  • pinch of salt and pepper
  • one potato, cut into large pieces
  • can (400g) chickpeas, drained and rinsed
  1. In a soup pot- add your onion and celery, with the oil. Cook til tender and then add the garlic.
  2. After these are cooked, you may add all the rest of your ingredients.
  3. When adding your potato you will need to add some water, about 4 cups.
  4. Cover and cook on low-medium and cook until the potato and carrot cook.
  5. When they are soft, your soup is basically done. Just need to garnish if you like. Or just serve.

Simple Squash Soup

  • one onion and one carrot, diced
  • one stalk of celery, sliced
  • one medium potato, diced
  • one medium squash, diced and cubed
  • chicken stock
  • and salt and pepper
  • some oil- one tbsp.

In a pot, add oil and vegetables, then potato and squash. Cover with enough chicken stock to cover it all. Season with salt and pepper.

Cook for about half-hour to 40 minutes, just enough to let everything cook and soften. Once that is done, you are all finished, simple easy soup. Doesn’t take too long to whip this up, and at wintertime. We usually have an extra squash or two sitting around.

  • chicken noodle
  • butternut squash
  • minestrone
  • tomato
  • tuna chowder(I think they are soup too)
  • fish chowder( I think they are soups too)
  • beef barley soup
  • chickpea soup

The list can go on and on. I bet you can think of some soups of your own. Maybe even some you just made for your own family also. Ones where you just went to the kitchen and grabbed a bunch of things. Threw them together and made a soup. Never wrote it down, it turned out great. Haven’t been able to duplicate it again since. But your new ones have been even better than the first one.

Those are the soups I love to make. I believe that these are made with love. That is why you are unable to make the exact one each time. It just gets better and better.
