Easy chicken dinners are anything that you would make with chicken. Either bone-in or boneless is great for making your dinners. I use chicken breasts, mainly because I bought lots when it was on sale.
I also use a lot of turkeys too, as I buy when they are on sale too. Usually at Christmas time. I have a turkey dinner, then plan my other meals around what I have left of the turkey. A turkey chow mein, or a turkey stir-fry. Turkey soup, of course, some biscuits too. Or even dumplings too. It all depends on how I feel that day, and what I am willing to make.
My go-to meal with Chicken breasts is a simple chicken stir-fry.
It is always good to have a quick and easy chicken dinner that you can make. No need for a recipe, just whip it up in no time. Even if it is so easy, that it takes you less than 10 minutes to get your dinner made.
We always need an easy dinner to make when you are tired from working all day. Or just don’t feel like cooking at all. No need to go and get some take-out, cause your body doesn’t need all those calories. Your wallet hurts when you go and get take-out.
Simple Chicken Stir-fry
- 2 Chicken Breasts, sliced thin
- 4 cloves garlic minced
- 1 tbsp. grated ginger, add less if you want.
- salt & pepper
- 1 tbsp. sesame oil
- 2 cups frozen oriental mix or just broccoli and cauliflower.
- 1-2 cups of chicken broth,
- little cornstarch in water, to thicken ( a tsp of cornstarch)
First cook the chicken breasts on med-low heat. Salt and pepper while cooking. Add the minced garlic, ginger. Cook all till did. Then add the broth, vegetables, and sesame oil, till cooked, usually on low heat. If cooked on med. heat- may stick to the bottom. At the time when vegetables are almost thoroughly cooked, you would then add the cornstarch mixture. Cook on low now, with the heat on low. Maybe add a lid, but stay close and watch it.
When it is all cooked you may serve it over rice or noodles.
Another Easy Chicken Dinners
The possibilities are endless on what you want to make and can make with your chicken breasts. Don’t even need much planning to make your easy dinner. As I made this one because I had lots of lettuce and didn’t want to cook. I also had leftover chicken breast from the night before.
Easy Chicken Ceasar Salad
I use one large cooked chicken breast sliced or cubed. Half a head of lettuce, sometimes less. Add some shredded carrots. Mix together, and toss with Ceasar salad dressing.
You can add croutons if you want, shredded cheese or parmesan. I added some cubed long English cucumbers and tomato. I didn’t really notice it was there. Cucumbers added a crunch to the salad.
These are two of the recipes I currently cook for my family when I am having chicken for dinner. But there are a lot of easy chicken dinners you can make for your family that they will love.
Or even just have a chicken sandwich or even a wrap. You can add what you want to your wrap also. Which is even better, because you made it and added what you like.

Easy Turkey Casserole
- 2 cups or more, leftover turkey, cut up
- 2 cans of either mushroom/celery soup
- 1 cup milk
- 1/2-1 cup peas, frozen
- 1-2 cups cooked pasta, your choice
- salt and pepper
- Cook some pasta first, till cooked. As that is cooking you can cut up your turkey pieces.
- Mix together mushroom/celery (undiluted) and the milk. You can use less milk, if you prefer it to be the way it is, with just the soup.
- Add the peas to the mix, and add some salt and pepper if you like.
- Mix all ingredients together once the pasta is cooked.
- Add the turkey, mix together.
- Put into a 2 qt. baking dish. You may need to lightly grease, if you think it may stick.
- Make any kind of topping you like, even if its just some cheese. Or breadcrumb topping. Your choice.
- Bake at 350 deg. for 20-30 minutes until it bubbles. You just want it to thoroughly warm it all up. If you didn’t already add cheese, now would be a good time to do that.
