My new fav is salmon casserole, we always heard of tuna casserole. But I know I can’t be the only one that would cringe at that. Cause you remember that one back from your childhood, cause I know I do. My mom used to put toasted bread crumbs on it and little bit parmasan. This can easily be adapted to what ever meat you have on hand. I know some also use ham, I think I will try some cut up chicken or even use left over chicken. The possibilities are endless.
Salmon Casserole
- 1 cup uncooked, pasta
- can of salmon, drained
- 1 Tbsp margarine
- 2 Tbsp flour
- cup of milk
Boil some water for your pasta and salt a little for flavor. It can be macaroni or egg noodles. I used penne noodles, which took a bit to cook them cause they needed more time to cook. I find that one cup uncooked was good enough. Once your pasta is cooked, set it aside. In your cup of milk add the flour and mix till no more lumps. Melt your margarine, and then you would the flour mixture. Cook on low heat till it starts to thicken. Keep stiring it to make sure you have no lumps.
In a 8×8 pan, you will add your pasta and your salmon on top of the pasta. Then pour your white sauce over them. If you needed some seasoning, you would add now or before you pour. At the end, you can sprinkle some cheese over top if you like. Or prefer bread crumbs you can do that also. Bake at 300° F. This temperature worked to just warm it up and melt the cheese( I placed that on my casserole) and bake for 25 minutes. Serves 4.
This is a great easy dinner and you probably can make ahead of time if needed.
Other Versions You Could Make
Ham Casserole– Just use ham instead of salmon and do all the same as stated in the recipe. Even add a bouillon cube to your recipe for more flavor.
Chicken Casserole- Use can of chicken instead of the can of salmon. Rest of the recipe just the same. I think I would add some bread crumbs to the top of this before sticking it inside the oven.
You need to add more to this quick easy meal, add some veggies like peas and carrots or even just corn. Then no need for a side dish of vegetables if you add directly to the casserole. I was thinking the next time I make this I may have some garlic bread on the side. Or I wonder how stove top stuffing would be on the top of the dish would taste? Or even just have a bun on the side of this dish.

I know salmon patties is simple easy and sometimes we forget how easy it is. If you know how to make meatloaf or even potato patties, then you should easily now how to do this.
- 1-2 cans salmon, drained
- 1 egg, mixed
- one cup breadcrumbs
- salt/pepper
- Oil for frying,(tbsp or more)
Use either one can or two, it is up to you and if you use one. It may be a bit too dry, so you may want to cut down on the breadcrumbs. The egg should be ok, cause it is your binder for all the ingredients. In a bowl, add your salmon and season, then add the egg and breadcrumbs. Stir to mix all ingredients. Form into little patties to fry.
Heat your frying pan after you added the bit of oil. Make sure it is warm enough before you add your patty. Add the patty and don’t flip til it has browned a bit and then flip. Cook for about 2-3 minutes. Or however long you think you need it. Depending on how crispy you like it or gently cooked.
Potato Patties
If you liked how the salmon patties turned out, then you make want to try and make these. Using mashed potatoes instead of salmon and breadcrumbs. Use the one egg and salt and pepper to add to your mashed potatoes. Another simple easy thing to make and a great side dish also.
