Carrot Cake With Frosting

Carrot Cake with frosting using a food processor, is something I came across while I was looking up recipes. Got lots of carrots then this is something that would be easy for you to do.

All you need to do is have some carrots and a can of pineapple crushed, and the ingredients you need to make a cake.

Carrot Cake Recipe(using a Food Processor)

  • 2-3 carrots, shredded (roughly one cup)
  • 1/2 c. can- crushed pineapple, drained
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1 tsp. of baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp salt
  • 2/3 c. vegetable oil
  • 2 eggs
  • 1 tsp. vanilla
  • (opt) 1/2 c. chopped walnuts

With the food processor, using the shredding disk, shred carrots; set aside. Rinse and dry the container.

  2. Using a steel blade, add the flour, sugar, baking powder, and baking soda, cinnamon and salt- use 3 or 4 on/off turns.
  3. Add the previously shredded carrots,pineapple, oil, eggs, and vanilla. And again, 3 or 4 turns on/off . Remember to scrape bowl whenever needed. You can let the machine run for 10 seconds. Add the walnuts- if your using them. run the food processor again for 10 seconds.
  4. Pour your finished mixture into a prepared 9×9″ pan.
  5. Bake at 350 deg. F. for about 45-50 minutes. Make sure to cool the cake before icing it.

Cream Cheese Frosting

  • 1/4 c. margarine, cut up into chunks
  • 4 oz. cream cheese, cut into chunks also
  • 2 c. icing sugar
  • 1 tsp. vanilla
  1. Using the steel blade on the food processor, cream the margarine and cream cheese together until smooth. Along with this you will be adding the icing sugar, little at a time. Add the vanilla also. Process until smooth and creamy consistency, scraping the bowl when needed.
  2. Spread over the cooled cake. And enjoy.

Now this is just one simple cake recipe you can use with a food processor. I thought it would be something that may interest others, since we all have carrots in our fridge. And it is not that hard to whip up your own carrot cake, without having to go to the store to have one. So you can figure out which one if easier for you to stir the mix yourself or to use a food processor. I don’t eat much carrot cake, as I am the only one that eats this kind of cake.
